Easy Homemade Pot Chicken Pho Recipe
Some versions of pho are made with a deeply flavored beef bone broth which will take hours, if not days, to create. This chicken pho recipe authentic version, however, uses ingredients that are easy to remain available, like bone-in chicken thighs, instant rice noodles, and pre-made broth or stock, in conjunction with an array of delicious spices.

WHAT IS PHO?
The “original” pho was, and is, a really simple Vietnamese dish of beef bone broth, flat rice noodles, and thin slices of beef. Other Luke Nguyen chicken pho recipes soon appeared that involved additional spices and flavors, chicken rather than beef, and even vegetarian pho!
These days, pho is everywhere, with more variations and topping ideas than you’ll shake a stick at. These creative versions won’t be exactly “authentic,” depending on who you ask, but they’re craving-worthy!
USAGE OF INGREDIENTS
- Vegetable Oil: For drying quickly in a little fat the spices and aromatics.
- Star Anise, Cloves, a Cinnamon Stick, Coriander, and Whole Black Peppercorns: These fragrant spices give the broth its famously sweet, spicy, almost Christmas-y flavor.
- Fresh Ginger: You’ll need a two-inch slice of ginger, peeled and thinly cut.
- Onion: I exploit 1 small yellow onion chopped, during this recipe. White or sweet onion also can be substituted.
- Fresh Garlic: Mince the garlic, or put it through a press.
- Chicken: Chicken thighs shred nicely and add richness to the present dish. You’ll need about 1 1/2 pounds bone-in, chicken leg pieces without skin.
- Broth: You’ll need a quart of excellent broth. I prefer to use low-sodium chicken broth during this recipe, but homemade would be even better!
- Water
- Fish Sauce: A touch goes an extended way, but don’t leave it out! Like anchovies in Caesar dressing, the fish sauce adds a crucial note of salty umami flavor to the broth.
- Rice Noodles: Like fish sauce, instant rice noodles are usually found in the Asian foods section of your grocery. You’ll also get them organized online.
- Garnishes: Bean sprouts, carrot sticks, sliced red chili, mint or cilantro, and lime wedges are all great enhancements for pho.
Ingredients & Quantity of Chicken Pho Recipe
- 1 tbsp oil
- 3 shallots, sliced
- 3 garlic cloves, sliced
- 1 lemongrass stalk, chopped
- 2.5cm piece ginger, sliced
- 3-star anise
- 1 cinnamon stick
- 1 tsp coriander seeds
- ¼ tsp Chinese five spice
- ¼ tsp black peppercorns
- 1 tsp castor sugar
- 1 tbsp fish sauce
- 1.25 – 1.5 liters of good quality fresh chicken broth
- 3 large chicken breasts (about 500g)
Chicken Pho Recipe Method:
STEP #1
Heat the oil in a small frypan on medium heat and gently cook the shallots and garlic until caramelized and golden brown (about 4-5 mins).
STEP #2
In a large saucepan, put the slowly cooked shallots and garlic, lemongrass, ginger, star anise, cinnamon stick, coriander seeds, Chinese five-spice, peppercorns, sugar, fish sauce, chicken stock, and chicken breasts. Cover with a lid and convey to a very gentle simmer for about 15 minutes.
STEP #3
Meanwhile, cook the noodles, with instructions given on the packs, until just cooked through (do not overcook). Put them under cold water to prevent them from sticking together. Drain and divide between serving bowls.
STEP #4
Strain the soup through a sieve. Discard the spices. Shred the chicken and keep it to at least one side. Return the soup to the pot and convey it to a boil. Add more fish sauce according to taste if needed.
STEP #5
To serve, ladle piping hot soup into bowls of noodles and chicken, and top with onion, carrot, bean sprouts, and herbs, plus the chili, crispy shallots, and kaffir lime leaf if using. Serve with a lime wedge to squeeze over, and more fish sauce and chili for a better taste.
TIPS FOR the Best PHO
- Trim the Chicken. an honest pho broth has little to no grease or oil on the surface, so always use skinless chicken. If you can’t find skinless bone-in thighs, trim the skin away yourself, and deduct any excess fat also.
- Sweet and Spicy: If you’re trying to find an additional dimension of flavor, try adding a touch little bit of your favorite sweetener to the present dish.
- Yellow Rock Sugar is the traditional sweetener of choice for pho, but if you don’t have that (or don’t wish to use it), you’ll try any sweetener you wish. Start small, and add more to taste.
- Variation Ideas: you’ll also make this recipe using shrimp or thinly sliced beef rather than the chicken, but take care of the cook times, as those ingredients cook much, much faster than bone-in chicken. Additionally, you’ll put hoisin sauce, sriracha, green onions, and each one kind of other toppings out for guests to undertake.
What to serve with Chicken Pho
- Drinks: Pho is a meal in itself, so it doesn’t need any side dishes, per se. However, it is often very nice to start the meal with a special drink, kind as a Coconut Mojito, or a refreshing Black Cherry Spritzer.
