- Two cups of uncooked white rice
- Four cups of freshwater
- Three tablespoons of vegetable oil
- Two cloves of garlic, fully minced
- Three skinless, boneless chicken breast halves – cut them into bite-size equal pieces
- Two tablespoons of the soy sauce, or just to taste
- Half cup of the dry-roasted, unsalted peanuts
- Almost four large size leaves of iceberg lettuce
- One can of the mandarin oranges, fully drained
Method of Vietnamese Chicken Recipe:
Step #1
First of all, you’ve to bring the rice and water to a boil in a usual saucepan over high heat. And then reduce the heat to medium-low, fully cover, and simmer it until your rice is tender, and the liquid has been completely absorbed, for almost twenty to twenty-five minutes.
Step #2
After that, you can let the rice stand, fully covered, while you finish this dish. Now, you have to heat oil in a simple skillet over medium heat until shimmering, and then just cook and stir your garlic until fragrant, for almost one minute.
Step #3
Here you need to stir in the chicken, and then cook and stir until it seared and beginning to lightly brown, for almost five minutes. However, you can stir in soy sauce and some peanuts, and cook and stir until your chicken is no longer pink inside, and your soy sauce has coated the chicken and peanuts, for five more minutes.
Step #4
Finally, you have to remove the chicken mixture from the heat. Line a minimum of four plates with lettuce leaves, and then scoop just one cup of cooked rice onto each leaf. You need to top with chicken-peanut mixture, and also sprinkle each plate with mandarin orange slices.
