Recipe of candied spiced pecans stovetop:
First of all, you have to preheat your oven to 350°F and set an oven rack in the middle position for the ease. Then line a simple baking sheet with the parchment paper. After that, take a medium-size bowl, and whisk together the confectioners’ sugar, kosher salt, cayenne pepper, and the water.
Then, just add some pecans to your sugar mixture and also stir until the nuts are evenly coated here. Now you have to transfer the pecans to the previously prepared baking sheet and then arrange it in a single layer. You must do your best to make sure that the nuts are evenly spread out. After that, scrape out every last bit of the glaze from the simple bowl and then drizzle over the nuts. Then, bake it for ten to twelve minutes, until your pecans are caramelized and then the caramel on the baking sheet is a rich brown color but it must not burn. You will observe that the nuts around its edges will darken first; so you must watch closely so they don’t burn. After that immediately slide the simple parchment off of the baking sheet and then just allow the pecans to cool fully on the countertop. Once you have cool it, immediately remove the pecans from your parchment, breaking apart any clusters if it is necessary, and store in an airtight container for almost two weeks. In the end, if your nuts are sticky after the cooling, it means that they are a bit undercooked. So, you need to pop them back in your oven for a few minutes and let it cool again.
Ingredients:
- One large size egg white
- Two cups unsalted pecan halves
- Two cups unsalted roasted cashews
- Half cup sugar
- One tablespoon ground cumin
- 3/4 teaspoon of the cayenne pepper
- Just one teaspoon ground cinnamon
- Some of the kosher salt
Method:
Firstly preheat the oven to almost 250 degrees F. and then beat the egg white with the one tablespoon water in a large size bowl until it looks foamy. Then add the nuts, sugar, cumin, cayenne, cinnamon, and half teaspoon of the salt and mix it very well. After that, spread the mixture on the parchment-lined baking simple sheet. Now you have to bake until your nuts are mostly dry but still slightly sticky, just about forty minutes. After that, remove these nuts from the oven and stir it constantly. You can also reduce the temperature to two hundred degrees F. Then return the nuts to the oven and also bake it until crisp, about thirty minutes more. You have to stir to loosen the nuts from your baking sheet and cool it fully on the sheet.
