- One pound tomatillos halved
- Half of a medium-size red onion, quartered
- One jalapeño, deseeded and halved lengthwise
- Two teaspoons of olive oil
- Kosher salt and freshly ground black pepper just to taste
- Half teaspoon of ground cumin
- Half of a lime, fully juiced
- 1/4 cup of the cilantro, plus more for garnish
- Four eggs and 1/4 cup crumbled Cotija cheese
