- 12 Dried chipotle peppers, Soaked
- 4 tbsp. Olive oil
- Three tbsp. of cumin seeds
- Two boneless skinless chicken thighs
- Two lbs. of onion, diced
- One large size garlic
- Four stalks of carrots, diced
- Three large corn niblets
- 1.5 cups of oregano
- Just one tbsp. chicken broth
- Two Fresh cilantro, chopped seasoning limes
- Salt for taste
Dried Chipotle Peppers Sauce Method #1:
Firstly place four whole dried chipotle peppers in a normal size bowl. Then add one cup of the boiled water to this bowl, and let it sit for almost thirty minutes. After that, add the olive oil to a large size pot over medium-high heat. Now heat it until a unique flick of water sizzles upon the contact, and then just add the cumin seeds and the chicken in it.
However, you have to cook the chicken pieces on one side until the brown color appears, about six minutes, and then flip these pieces and again cook on the other side of it, about five minutes.
Moreover, add the onions and garlic to it. And cook them until they become very soft, fragrant, and translucent for about ten minutes. Now you have to add the celery, carrots, and corn niblets and stir constantly. You need to cook them for another five minutes.
Even so, add some quantity of oregano and the broth, again stir, and bring the soup to a simple simmer. At that time, you have to return to your chipotle peppers that have been soaking in fully hot water for thirty minutes.
Drain this water, and then fully chop the coarse stems off the peppers.

- Half tsp. salt
- Half tbsp. black peppercorns
- Some extra water if necessary
Dried Chipotle Peppers Method #2:
Firstly you need to thoroughly wash the chipotle peppers, then remove the stems, and place them in a simple bowl. Later on, you have to cover them with boiling water and weigh them down with a small size lid or even a plate.
Let them soak for twenty minutes. Now you have to remove four soaked chipotles, leaving the rest in the same soaking liquid, and place them in a simple food processor or the blender.
Moreover, add some ketchup and half a cup of water. Blend it until you have the best and uniform paste. Then add these blended chipotles and tomatoes into the large pot with the remaining chipotles soaked in the water. Please add a particular quantity of onions, garlic, salt, peppercorns, and vinegar to the saucepan, and mix very well.
Furthermore, you have to bring it to a boil, by reducing the heat and allowing these chipotles to simmer for about one hour and forty-five minutes. You can check them after one hour.
