This easy Kid Friendly Egg Salad recipe makes the best egg salad sandwiches for the kids. Usually, it starts with the best hard-boiled eggs and a very simple, creamy dressing. It’s a fact that, growing up, we would often have boiled egg salad sandwiches for our lunch.
However, my mom’s recipe for the egg salad was quite simple, with just eggs, mayonnaise, mustard, table salt, and black pepper. But, I’ve made some changes to my mother’s simple recipe and I’ve kept everything that you crave in the best and classic egg salad recipe.
Furthermore, you can easily make this delicious egg salad ahead and refrigerate it for almost 3 days, so it’s great for meal preparation. In case, if you cook your eggs before time, then this healthy recipe comes together in just a few minutes. No doubt it’s perfect for a quick lunch.
Because these unique egg salad sandwiches take just a few minutes to whip up and you can easily have fun with your available ingredients from dijon mustard to grated carrots to capers. Moreover, an old-fashioned egg salad sandwich is best and great to put in a school lunch too to switch things up a bit. School lunch is where you can easily make food fun for your child.

Ingredients:
- Six large size eggs
- Two teaspoons Dijon mustard
- ¼ cup of plain Greek yogurt or you can use mayonnaise
- ¼ teaspoon each of the table salt and pepper
- ¼ cup of the finely chopped red onion
Method of Avocado Egg Salad:
Step #1
First of all, fill a pot with cool water and then add the eggs. Bring these eggs to a boil over high heat. Cover your pot with a lid, turn off the heat and let your eggs cook in the hot water for almost twelve minutes.

After that, transfer the eggs to a medium bowl of ice water and let them sit for almost 8-10 minutes. Peel your eggs.

In a large-size bowl, you need to whisk together the Dijon mustard. Plain Greek yogurt (or mayonnaise), table salt, and pepper. After that, you have to chop the eggs and add them to the bowl, along with the chopped red onion.

You’ve to stir until well combined. And then, taste and season, as required. Lastly, you can serve your Kid friendly egg salad in a sandwich with lettuce, on toasted bread topped with the best-sliced avocado, or in lettuce wraps.
Important tips:
- You must keep it sweet; you can use a combination of honey, soy sauce, and a small quantity of fresh ginger.
- Must include known favorites: commonly I like adding 3 veggies, including at least one that each kid likes and, if possible, one new one for them to try.
- Try to use whole wheat: In case, if you’re cooking at home, use whole-wheat spaghetti noodles, just to add a bit of bite and some nutrition.
