- One slice of thin bacon, cut into strips
- One small onion, diced – about 65g
- One Carrot scrubbed clean and diced – about 170g
- Half stalks Celery – about 45g
- Two large Russet potatoes, peeled and diced – about 400g
- Two and a half cups Chicken broth
- Half tbsp. All-purpose flour/plain flour
- One and fourth cup of Fresh milk
- One and fourth cup Heavy cream
- Half tsp. Salt or to taste
- Black pepper to taste
- Half tsp. Cajun Spice mix
- One tsp. Minced fresh parsley
- One cup Grated cheese of your choice
- Two Bay leaves, optional
Method of Plain Potato Soup:
Step #1
Firstly you have to add bacon pieces to a soup pot over medium heat and then cook bacon until crisp and fat is fully rendered. After that, you have to remove the bacon from the pot and set it aside for some time. You have to pour off most of the grease, but do not clean the pot.

In this step, return the hot to medium-high heat and then add the onions, carrot, and celery. Stir it constantly and cook it for two minutes or so, then add the diced potatoes to it.
