- One and a half cups whole milk
- Three large size eggs, yolks, and whites separated
- Eight tbsp. of butter, fully divided
- One tbsp. of almond extract
Method of Special Breakfast of Pancakes:
Step #1
First of all, you have to place the frozen cherries and sugar in a medium-size saucepan and set it over medium heat. Stew some cherries until tender and falling apart, for about fifteen to twenty minutes. By using a slotted spoon, you’ve to remove the cherries from the pan.
Step #2
After that, you have to press the hot cherries with a fine-mesh sieve, to macerate them. And then, place the macerated cherry product back into your pan, with the juices.
Step #3
Now, you’ve to add maple syrup, some lemon juice, and almond extract into your cherry juice. Furthermore, bring it to a boil and then simmer until reduced by a third and slightly thicker.
Step #4
Here, you have to sift flour, baking powder, sugar, and table salt into a large size bowl. Add your poppy seeds to dry ingredients and toss to distribute evenly.
Step #5
Separate these eggs into two separate bowls in such a way that place yolks in one bowl, whites in the other. Using a stand mixer, you need to whisk the milk, egg yolks, melted butter, and almond extract to the mixer, whip it until fully combined.
Step #6
Add your all dry ingredients to the bowl and mix them very well until just combined but do not over mix.
Step #7
However, you’ve to place egg whites in a separate mixing bowl. By using an electric hand mixer, you can whisk them until medium peaks form. Gently fold half of these egg whites into the batter with a simple rubber spatula.
Step #8
In this step, heat a griddle until hot, at almost 350° F. And then add a little of the remaining non melted butter to your hot griddle. Add a scant half cup of pancake batter and let it set. When bubbles begin to form, instantly lift these pancakes once golden brown, and flip them over. Cook them until golden brown on both of its sides.
