Do I need to refrigerate this cake?
It’s a fact that an unfrosted pumpkin cake can sit out covered at room temperature like most other cakes. We also recommend refrigerating an iced one, however. Ingredients:
For The Cake
- Two cups granulated sugar
- 3/4 cup of the unsweetened applesauce
- Half cup of vegetable oil
- Two tsp. vanilla extract
- One can (15 ounces) of pumpkin puree
- Four large eggs
- Two cups all-purpose flour
- Three tsp. of baking powder
- Two tsp. baking soda
- Half tsp. of salt
- Two tsp. ground cinnamon
- 1/4 tsp. of ground cloves
- 1/8 tsp. of nutmeg
For The Frosting - Eight-ounce cream cheese softened
- Half cup unsalted butter (1 stick) room temperature
- 2-1/2 cups of the powdered sugar
- Two tsp. vanilla extract
- 1/8 tsp. of salt
- Two tbsp. heavy cream optional
Method of Jamaican pumpkin cake recipe:
Step #1
First of all, you have to preheat the oven to 350°F. And then, grease and flour 9 x 13 baking pan.
Step #2
After that, in the bowl of a stand mixer fitted with the paddle attachment, add the sugar, oil, and applesauce. You have to beat on medium speed until combined, about one minute. After that, add the vanilla and pumpkin and beat for almost one minute. With the mixer on, you have to add eggs one at a time, beating until completely combined and the mixture is smooth.

Now, in a medium-size mixing bowl, just add the flour, baking powder, baking soda, salt, cinnamon, cloves, and some quantity of nutmeg. Whisk to combine very well. After that, add all the dry ingredients to the pumpkin mixture. Beat it at medium speed until fully combined. Scrape down the sides of the bowl and beat again for some time.

Lastly, pour batter into your prepared pan, by using a spoon to spread the batter out and smooth the top of your cake. Bake it in preheated oven for almost forty minutes until the knife inserted comes out clean. Cool it on the wire rack.
