How do you make the Best tiramisu?
To make a traditional and perfect tiramisu you can use the mascarpone filling from this recipe to create the best layer upon which you will add ladyfingers briefly soaked in your coffee mixture. You have to create lots of layers of the filling and ladyfingers beginning and ending with the filling. You can also top it with a dusting of cocoa powder and garnish it with candied pansies if desired.
Ingredients:
- Six large eggs
- One cup granulated white sugar almost 200g
- One cup all-purpose flour sifted almost 120g
- One tbsp. Cornstarch 7g
- Half tsp. baking powder
- Half cup strong brewed coffee, espresso preferred (120ml)
- Mascarpone Frosting:
- Four and a half cups full-fat mascarpone, cold (1000g)
- Two and a half cups powdered sugar, sifted (300g)
- Half cup strong brewed coffee – espresso preferred, fully chilled
- One and a half cups heavy cream, cool (360ml)
- Unsweetened cocoa just for the dusting on top
- Decoration to your preference
- Whipped cream
- Cocoa powder
Instructions:
Step #1
First of all, you have to preheat your oven to 350°F / 175°C. After that, you have to line the bottom and then sides of three 8″ (20cm) baking pan with the best quality parchment paper. Set it aside for some time.
Step #2
To make the genoise cake:
In a large-size mixing bowl, by using a handheld or common stand mixer fitted with a whisk attachment, whisk all the eggs on medium speed just until combined. And then, add sugar and whisk on medium-high speed for about twelve minutes until white pale, foamy, and tripled in size. To check that, if you have the right consistency, let a bit of batter drip off the whisk attachment on the top of your mixed batter. The dripped batter should be visible for almost ten seconds before it sinks into the batter. In case, if it sinks earlier, then you will need to whisk longer.

In this step, with a wooden spoon, you’ve to fold in flour, cornstarch baking powder very carefully. Keep in mind, you don’t overwork the batter and don’t work too fast otherwise, it can lose too much air. You must divide it in prepared baking pans and bake for twenty-two minutes until a toothpick centered in the middle comes out fully clean.

Let it cool in the pans for almost five minutes. Then remove it from pans and remove the paper simultaneously. After that, transfer to a wire rack and let it cool fully.

To make the mascarpone frosting:
You have to whisk mascarpone on medium speed until creamy for about two to three minutes. After that, add powdered sugar and whisk it until creamy, and combined another two minutes. And then add coffee and whisk until well combined and creamy for about three minutes. Now, stir in the heavy cream and whisk until fully combined and creamy for another two to three minutes.
Step #6
Assemble the cake:
For this purpose, place the first cake layer on a cake board or any cake stand. After that, brush with a third of half cup coffee. Then, you have to spread ⅓ of your mascarpone cream with an offset spatula on the top. You have to repeat one more time the same process.
And then, place the last cake layer on the top and lightly frost the outside and the sides of the cake with the remaining frosting. After that, level the top and sides with the offset spatula. Chill for at least four hours in your fridge. Pipe whipped cream on the top if you want. Then dust tiramisu layer cake mascarpone mousse with cocoa just before serving. Lastly, you need to store leftovers in an airtight container in your fridge for up to three days.
