Chicken Noodle Soup Ingredients:
- One tablespoon of olive oil
- One large size onion diced
- Four cloves of garlic minced
- Two large carrots fully chopped
- One rib celery fully chopped
- Six skinless chicken thighs, bone-in or eight legs
- Two quarts of chicken stock or broth
- Two chicken bouillon cubes, fully crushed
- Seven oz almost 200-gram green beans, fully chopped in thirds
- 3/4 cup of the corn kernels
- 4 oz 120 gram of baby spinach leaves
- Half quart (liter) of freshwater, as required
- 6 oz 200-gram vermicelli or egg noodles
- Table salt and pepper, just to taste
- 1/4 cup of the fresh parsley, fully chopped
Cooking method:
Step #1
Firstly, you have to heat oil in a large size pot over medium heat. After that, cook onion for almost two minutes, then add garlic, celery, and carrots; cook again for five minutes.
Step #2
After that, you have to add the chicken thighs, broth (stock), crushed bouillon, some green beans, and corn kernels. And then top up with fresh water if required to cover all of your ingredients.
Step #3
In this step, you’ve to increase heat and bring it to a boil for almost four minutes. Now, you can reduce heat, and partially cover the pot with a lid, and then allow it to simmer for about twenty minutes or until the chicken is cooked through.
Step #4
After that, you need to transfer your chicken to a simple plate and shred your meat; discard its bones. And then, you’ve to add the chicken back into the soup along with your noodles. Cover and cook it for almost eight minutes while stirring occasionally to separate all the noodles.
Step #5
Finally, you need to stir in the spinach leaves and then allow them to wilt in the soup for almost three minutes, pressing leaves into the liquid with the tip of a simple wooden spoon. Lastly, you have to season it with salt and pepper, just to taste and serve warm.
