Ingredients Of Minestrone Soup Vegan:
- Two tablespoons of olive oil
- 3/4 cup of onion diced
- Half cup celery sliced
- Half cup of carrots peeled, quartered, and sliced
- One zucchini halved and sliced
- Two teaspoons of minced garlic
- Table salt and pepper just to taste
- 1 14 ounces can of fully diced tomatoes
- Four cups of vegetable broth
- 1/4 cup of best tomato paste
- Two teaspoons Italian seasoning
- 1 15 ounces can of small size white beans drained
- 1 15 ounces can of the kidney beans drained along with rinsed
- Half cup of frozen cut green beans
- Half cup of small shell pasta
- Two cups of baby spinach leaves
- Two tablespoons of fully chopped parsley
Method Of Old Fashioned Minestrone Soup:
Step #1
Heat your olive oil in a large size best quality pot over medium-high heat. And then, add your onion, celery, carrots, and zucchini to your pot.

Cook it until all the vegetables are tender, for almost three to five minutes. After that, add the garlic to it and cook for another thirty seconds. You can season your vegetables with table salt and pepper to taste.

Add your all tomatoes, vegetable broth, best tomato paste, and unique Italian seasoning to the pot and bring it to a simmer.

And then, add the white beans, kidney beans, some green beans, and pasta to your pot. Simmer it for almost ten to fifteen minutes or until pasta and vegetables are fully tender.
