Method of Coffee Cinnamon Rolls with Maple Cream Cheese Icing:
Step #1
Firstly you’ve to heat the milk, some vegetable oil, and sugar in a medium saucepan over medium heat but do not allow this mixture to boil. Set it aside for some time and cool. When your mixture has cooled to 100-110°F then just sprinkle the yeast on top and let it sit on the milk for almost two minutes.
Step #2
Now you have to add four cups of flour. Stir in it until just combined, cover with a very clean kitchen towel, and set it aside in a relatively warm place for just an hour.
Step #3
After that, remove the towel and add your baking powder, baking soda, some salt, and the remaining half cup of flour. Stir thoroughly to combine very well.
Step #4
You can use the dough right away, or even place it in a mixing bowl and refrigerate for about three days, punching down your dough if it rises to the top of the bowl.
Step #5
Here you can remove the dough from your pan or mixing bowl and on a floured baking surface, just roll the dough into a very large rectangle, about 30 x 10 inches.
Step #6
In this step just spread the butter evenly over the surface of your dough and then sprinkle the sugar, cinnamon, and some coffee grounds evenly over the butter. Keep in mind, you’ve to roll the rectangle tightly toward you, and when you reach the end, pinch the seam together. On a common cutting board, by using a sharp knife, make almost twelve rolls.
Step #7
Finally, place your sliced rolls into a greased 9X13 baking pan. And then preheat the oven to 375° F and cover rolls with the best kitchen towel and set aside for some time to rise on the countertop for at least twenty minutes before baking. Remove this towel and bake for twenty minutes, until golden brown.
Step #8
In a simple bowl, by using a hand mixer or stand mixer, you have to blend the cream cheese, powdered sugar, milk, butter, salt, and maple flavoring. Taste it and then add in more maple, sugar, butter, or milk as required until the icing reaches the desired consistency. After your rolls are finished baking, and still warm, generously coast them with the frosting.
