Ingredients of best Italian sausage soup:
- One Tbsp. of olive oil
- One lb. of best Italian sausage mild or hot as required
- One and a half cups of chopped yellow onion
- One cup of diced carrots two medium size
- 3/4 cup of the sliced celery or two ribs
- 3/4 cup of fully diced bell pepper
- One Tbsp. of minced garlic or 3 cloves
- Four cups of low-sodium chicken broth or more as required thinning
- One (15 oz) can of the tomato sauce
- One (14.5 oz) can of petite fully diced tomatoes
- Ne and a half tsp. Italian seasoning
- 3/4 cup of the dry orzo pasta
- Three Tbsp. of fully chopped fresh parsley
- Two Tbsp. of chopped fresh basil that’s optional
- Table salt and freshly ground black pepper just to taste
Method of Italian Sausage Soup:
Step #1
First of all, you have to heat olive oil in a large size pot over medium-high heat. After that, just break sausage into chunks into a pot.

Secondly, let it brown on the bottom for about three minutes, and then turn and break up your sausage and cook until no longer pink. Now, you’ve to transfer this soup to a paper towel-lined plate and leave rendered fat in the pot over medium-high heat.

You should have almost one Tbsp. fat in your pot, if required add a little more olive oil or drain off all the excess fat if there’s too much. After that, add onions, carrots, celery, and some bell pepper and saute until starting to soften it, for almost six minutes. And then, add garlic and saute one minute longer.

In this step, you have to pour in the broth, tomato sauce, some tomatoes, and then add Italian seasoning to it. After that, return your sausage to the pot and season this mixture with table salt and pepper to taste. Now, bring it to a simmer then cover, minimize heat to medium-low and let simmer for five to ten minutes until veggies are almost soft.

After that, you need to add orzo. Then, just cover and let it simmer, stirring constantly. You have to cook until nearly all done for about eight minutes. And then, you’ve to remove it from heat and stir in some ice in case if you want to help stop the orzo from cooking and getting mushy. You can also stir in fresh parsley and basil.
Finally, serve warm, topping servings with grated parmesan if desired.
