Method of Vegetarian Split Pea Soup Recipe:
Step #1
Firstly, you’ve to take a Dutch oven or 5-quart heavy pot along with a lid and heat oil over medium. After that, add onion, carrots, celery, and thyme; then season with some salt and pepper. Cook it until your vegetables begin to soften, for almost five to eight minutes.
Step #2
After that, you have to add broth, split peas, ham bone, and five cups of fresh water. Bring it to a boil, and then reduce heat to medium-low, and partially cover it; simmer until peas are soft, for almost thirty to forty-five minutes.
Step #3
Meanwhile, you can make croutons: In a large-size skillet, melt your butter over medium heat. And add your bread and cook, tossing occasionally, until it becomes browned and crisp, for six to eight minutes, and then transfer it to a paper-towel-lined plate.
Step #4
Finally, you’ve to remove and discard the bone from your soup. Working in the batches, you need to puree just half the soup in a blender but don’t overfill it, and return to the pot.
Now add ham cubes, and simmer it until heated through. If required, thin it with fresh water. Add some quantity of salt, pepper, and lemon juice just to taste. Serve it topped with croutons.
