- Half teaspoon of salt
- One teaspoon of baking soda
- One teaspoon of baking powder
- One egg, separated
- Four Tablespoons butter, fully melted and cooled
- One cup of buttermilk
- ¼ cup of fresh milk
- Two ripe bananas, sliced in half-inch rounds
- Half cup of chopped pecans
- Some quantity of peanut butter and maple syrup for serving
- Butter, for the skillet
Method of Banana Pecan Syrup:
Step #1
Firstly, in a dry skillet, and then toast your pecans over medium heat until it is fragrant about two to three minutes. Set it aside for some time.
Step #2
In a medium bowl, you have to whisk together flour, some sugar, table salt, soda, and baking powder.
Step #3
In another medium-size bowl, whisk together the egg yolk, some butter, buttermilk, and milk. Add your yolk mixture to the dry mixture and then stir it gently until barely combined.
Step #4
After that, add egg white to your mixture and then stir it until a thick, lumpy bumpy batter forms uniquely. Quickly stop it before the batter smooths out! However, this egg white cannot even be all the way incorporated, that’s okay but we like lumps and bumps in our pancake batter.
Step #5
Here, you’ve to heat a griddle or grill pan over medium size heat. After that, melt some butter in your pan. Place five slices of the banana in a circle on the griddle for each of your pancakes. Ladle this batter on the top of the pancakes, covering it completely.
Step #6
Cook it until the bubbles start to appear on the exposed surface of your pancake. When the bubbles appear, flip your pancake and cook it for an additional three minutes or until browned. Sometimes these bananas get a little mangled in the flip. Don’t fret, it will be surely delicious!
Step #7
Keep these pancakes warm in a single layer on a simple baking sheet in an oven preheated to almost two hundred degrees or you can also serve immediately with peanut butter, toasted pecans, and warm maple syrup.
