This recipe is the custom of country cooks aka home cooks like you and me and that is why it gives a taste of home chicken fricassee. It is made in a very simple fashion. This recipe doesn’t need precise quantities but instead counts on classy ingredients and a deliberate braising technique for its piquant and rich flavor.
What is Chicken Fricassee?
It is more of a way of cooking than a genuine recipe. The literal meaning of Fricassee is cut up and fried chicken, so it is entirely up to the cook what he adds to the chicken.
But what is these days known as a chicken fricassee is chicken slowly cooked in white wine cream sauce. A fricassee is neither a saute nor a stew but halfway between them. It is a true classic dish. And quite frankly, you can have as many varieties as there are grannies in France. It relies on very simple ingredients and a single pot.

Vegetables to put in Chicken Fricassee
You can add any vegetable that does not fall apart and can bear a slow braising process. So, mushrooms, carrots, green beans, or even broccoli all will work here.
How to Make Chicken Fricassee:
- Brown the chicken pieces until they become brown and then move them to a separate plate.
- Then in the same saucepan, quickly fry onions, carrots, garlic, and your choice of herbs in some butter.
- Next, you have to add flour to thicken the sauce and quickly cook it till it is mixed with the butter and odors a little nutty.
- Mix with a wooden spoon after adding white wine until you have a thick paste.
- Put the browned chicken with the extracts back to the saucepan and cook in the oven uncovered for 45 minutes.
Add the cream to give it a final touch. It is very important to add the cream in the last so that it doesn’t separate due to the intense heat in the oven. Stir in a splash of heavy cream after your chicken is done in the oven.

Ingredients
- 1 Tbsp olive oil
- 8 chicken thighs and legs combined
- salt and pepper according to your taste
- 1 Tbsp butter
- 1 small onion chopped
- 2 cloves garlic minced
- 2 carrots cut into large pieces
- 3-4 sprigs thyme (leaves only)
- 2 Tbsp all-purpose flour
- 1/2 cup dry white wine
- 1 1/2 cup chicken stock
- 1/2 cup heavy cream
Prep Time: 10 minutes
Cook Time: 1 hour
Total Time: 1 hour 10 minutes
Instructions
- Heat up oven to 350 F. Dry chicken using a paper towel and add salt and pepper according to your taste. Put 1Tbsp olive oil in a large deep pot and place it over medium or high heat. Cook chicken for about 4 minutes on each side till it becomes golden on each side but make sure not to cook it through. Then put it on a separate plate until you need it. Remove extra fat only leaving 1 Tbsp in the pan.
- Fry onions and carrots over low heat for 7-10 minutes after adding 1 Tbsp butter to the pan. Put the garlic paste and thyme leaves and cook for 30 seconds. Moreover, Add 2 Tbsp flour and braise it while stirring until the flour gets absorbed by the fat completely and the mixture gives a nutty aroma. Add a half cup of white wine and boil it until it is slightly reduced. Add 1 1/2 cups chicken broth.
- Put chicken in the pan along with the extracts and oven-bake it exposed at 350˚F for 45 minutes.
- Take the chicken out of the oven and put 1/2 cup dense cream, stir until they are well-mixed. Taste it and add more salt according to your taste if needed.
